Walking passed the Valentine’s Day section at Target without loading my cart with yummy candy has been my biggest trial lately! I mean, come on, all that chocolate, and those cute colored hearts with sweet little notes! Part of me just wants the candies to add to my Valentine’s Day decorations because they’re just so pretty! But I know myself, and they wouldn’t just be there for decoration. It would start with one little taste, and snowball from there. So I look the other way and walk by quickly! Aren’t you proud?!
But, Valentine’s Day just isn’t the same without some kind of yummy treat!
I found this recipe from Salted Plains last summer and made them for my family and I thought they would make the perfect healthy treat for Valentine’s Day! You should definitely check out her blog! She has all kinds of yummy recipes that are always gluten free and naturally sweetened! I can’t wait to try out more!
It only takes a few ingredients like freeze dried strawberries, unsweetened shredded coconut, maple syrup, unsweetened baking chocolate, almond butter, vanilla, and coconut oil!
The strawberries give it the pretty pink color and also add a really nice tartness to balance the richness of the chocolate center.
And I’ll be honest, I love coconut in just about anything! Mmmm, mmm, mmm!
And Valentine’s Day just isn’t right without chocolate. Not in my world anyways! 😉 And I’ll tell you a little secret… I have been experimenting with baking chocolate in another recipe and it had seized up on me so I couldn’t use it in the other recipe (I’ll share that one later), but I didn’t want to just throw it away. So I heated it just until it was pliable and mixed it with the almond butter and other ingredients for this recipe and it worked perfectly! I was so happy I didn’t let that chocolate go to waste.
I found this heart shaped silicone mold at Michael’s and decided to try my treats in it as well as in a mini cupcake pan and I love how they turned out!
I think they turned out great! They’re so cute!
I did some of them in cute little red and pink mini cupcake liners also! It makes me so happy to have a really good treat that I can enjoy and not feel guilty about! And it’s cute for Valentine’s Day!
